Flight Recipe: Moroccan Couscous Salad

This time, the salad is made with couscous, a cereal that came from North Africa and has spread through France to other countries around the world. It is a form of wheat flour that is processed in a special way to obtain couscous.
It contains lots of nutritious fibrous carbohydrates and the grains are known for their relatively high protein content. However, the hydrated part does not have a high caloric value, because the fibers travel to the large intestine. In addition, it contains a large proportion of vitamin B, which supports the metabolic processes in our body.

Our richly spiced aromatic salad is a great snack of non-animal foods, minerals and healthy nut fats, just the right balanced meal before an easy workout.

For a larger bowl of salad, we need:

200 g couscous (cook according to instructions)
Half a small chopped onion
2 red peppers
2 zucchini
Clove garlic
A bigger pinch of cinnamon, coriander
Salt pepper
Lemon juice
A handful of chopped parsley
A handful of chopped mint
A handful of peeled almonds
A handful of raisins

Cook the couscous according to the instructions. Brown the onions, peppers, zucchini in the oil. Add the spices (cinnamon, coriander) and herbs (mint, parsley) then the peanuts, raisins and almonds. Mix everything with the couscous, sprinkle with lemon juice and season to taste, if necessary.
