It contains lots of nutritious fibrous carbohydrates and the grains are known for their relatively high protein content. For a larger bowl of salad, we need:
200 g couscous (cook according to instructions)
Half a small chopped onion
2 red peppers
2 zucchini
Clove garlic
A bigger pinch of cinnamon, coriander
Salt pepper
Lemon juice
A handful of chopped parsley
A handful of chopped mint
A handful of peeled almonds
A handful of raisins

Preparation:
Cook the couscous according to the instructions. Brown the onions, peppers, zucchini in the oil. Add the spices (cinnamon, coriander) and herbs (mint, parsley) then the peanuts, raisins and almonds. Mix everything with the couscous, sprinkle with lemon juice and season to taste, if necessary.
