Vegetable meatballs are simple and delicious, and by using different ingredients, they are always special, both in taste and color. Particularly attractive are orange carrots or beets, which shine with a strong ruby color. As a binder, legumes, boiled chickpeas, lentils or beans are used, which are ground in a blender or crushed with a fork, but flour can also be used. You can also add an egg to the meatballs, in which case the mass will be thinner, and consolidate it with a spoonful of breadcrumbs or two. Fry the meatballs in oil or in the oven, or in an air fryer. Season them with fresh or dried herbs, even hot ones like chilli.
For 4 people :
200g chickpea flour
100 g of beets
1 teaspoon flax seeds
salt, pepper, ground cumin, thyme
oil
Red beets are cooked, cooled and peeled. Cut into pieces and pass through a blender. Grind and put in a bowl. Grind or crush the flax seeds and add the beets. Season with salt and pepper and season with thyme and cumin. Stir and gradually add the flour. Knead in a smooth mixture, if the mass is too fine, add a little breadcrumbs. Leave to rest for fifteen minutes. We shape the dumplings by hand, a good centimeter thick. Brown them in hot oil, on each side for a few minutes.
