For me, barbecuing is next to impossible without delicious roasted red peppers on the grill.
You can consider such a strong salad as a healthy lunch that will include little protein and lots of vegetables. And a piece of bread on top to keep the measure full.
We will also catch up with the useful with the pleasant. We’ll be gathering a few more vitamins and minerals with the salad. Paprika is a wonderful vegetable for our digestive system, tomatoes contain antioxidants, arugula is rich in fiber, fights the growth of cancer cells, has a beneficial effect on the gastric mucosa mozzarella cheese provides the protein content of our meal. It should also be seasoned with a good olive oil.
We need (for a large plate of salad):
3 to 4 bell peppers baked or grilled
1 bag of mozzarella
Roast the peppers in the oven or on the grill and peel them (wrapped in a cold damp towel, they peel very easily). Place the washed and drained arugula on a plate. Place strips of peppers and slices of tomatoes on top. Finally, sprinkle with grated cheese and season to taste with salt, pepper, vinegar and oil.
